- ⅓ cup whole milk Greek yogurt
- 2 tablespoons tomato paste
- 1 tablespoon olive oil
- 1 teaspoon fresh ginger
- 1 teaspoon minced garlic
- ½ teaspoon ground turmeric
- 2 teaspoons garam masala
- ½ teaspoon ground coriander
- ½ teaspoon ground cumin
- ¼ teaspoon cayenne pepper
- 1 ½ teaspoons kosher salt
- 2 pounds boneless skinless chicken thighs
- 1 large red onion
- Lime wedges for garnish
- Chopped cilantro for garnish
Instructions
- In a mixing bowl, combine yogurt, tomato paste, olive oil, garlic, ginger, and spices.
- Add chicken pieces to the marinade; stir well and cover. Refrigerate for 1-4 hours.
- Thread marinated chicken and onion onto metal skewers.
- Preheat grill to medium heat; cook kebabs for about 22-25 minutes until done.
- Garnish with cilantro and serve with lime wedges.
