  • ⅓ cup whole milk Greek yogurt
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 1 teaspoon fresh ginger
  • 1 teaspoon minced garlic
  • ½ teaspoon ground turmeric
  • 2 teaspoons garam masala
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • 1 ½ teaspoons kosher salt
  • 2 pounds boneless skinless chicken thighs
  • 1 large red onion
  • Lime wedges for garnish
  • Chopped cilantro for garnish

Instructions

  1. In a mixing bowl, combine yogurt, tomato paste, olive oil, garlic, ginger, and spices.
  2. Add chicken pieces to the marinade; stir well and cover. Refrigerate for 1-4 hours.
  3. Thread marinated chicken and onion onto metal skewers.
  4. Preheat grill to medium heat; cook kebabs for about 22-25 minutes until done.
  5. Garnish with cilantro and serve with lime wedges.
