  • 1 pound ground chicken (at least 7% fat)
  • 12 medium zucchini (about 1½ cups shredded)
  • 2 garlic cloves, minced
  • 2 tablespoons fresh chives, chopped
  • Salt and pepper to taste
  • Oil for cooking
  • For the Cilantro Sauce: 1 cup fresh cilantro, 1 small garlic clove, 1/3 cup mayonnaise, 1 tablespoon cottage cheese, 1 tablespoon distilled white vinegar

Instructions

  1. Prepare the cilantro sauce by blending cilantro, garlic, mayonnaise, cottage cheese, and vinegar in a food processor until smooth. Refrigerate for at least 30 minutes.
  2. Grate zucchini using a cheese grater. Squeeze out excess moisture with paper towels. In a large bowl, mix grated zucchini with ground chicken, minced garlic, chives, salt, and pepper. Form into six 3-inch patties.
  3. Heat oil in a skillet over medium heat. Cook each patty for about 4 minutes on each side until golden brown and cooked through.
  4. Serve warm with the cilantro sauce drizzled on top or as a dip.
