- 2 cups Snap Peas
- 1 cup Edamame
- 3 tablespoons Scallions
- 1/4 cup Cilantro
- 2 tablespoons Lemon Juice
- 1 tablespoon Toasted Sesame Seeds
- 1 tablespoon Honey (or maple syrup)
- 1 tablespoon Fresh Ginger
- 2 tablespoons Chili Crisp
- 2 tablespoons Sesame Oil
Instructions
- Wash snap peas thoroughly and slice on a bias. Blanch edamame in boiling water for about 3 minutes.
- In a large bowl, combine sliced snap peas, blanched edamame, chopped scallions, and cilantro; toss gently.
- In another bowl, whisk together lemon juice, sesame seeds, honey (or maple syrup), ginger, chili crisp, and sesame oil until well combined.
- Pour the dressing over the vegetables; toss gently to coat all ingredients evenly.
- Serve immediately or refrigerate briefly to allow flavors to meld.
