- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter or vegan butter, softened
- 3/4 cup light brown sugar
- 1/4 cup granulated sugar
- 1 (3.4-ounce) package instant vanilla pudding mix
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line a cookie sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt; set aside.
- In a stand mixer or using a hand mixer, cream the softened butter with both sugars until light and fluffy (about 3 minutes).
- Add pudding mix, eggs, and vanilla to the creamed mixture; beat until combined and fluffy (2-3 minutes).
- Gradually mix in dry ingredients until just combined; gently fold in chocolate chips.
- Drop dough by large scoops onto prepared cookie sheet. Bake for 10–12 minutes until golden around edges but soft on top.
- Allow to cool on the sheet for two minutes before transferring to a wire rack.
