Instructions
- Melt the butter in a heavy-bottomed saucepan until it darkens slightly and develops a nutty aroma. Let it cool to room temperature.
- In a small bowl, whisk together flour, cornstarch, baking soda, and sea salt; set aside.
- Beat the cooled butter with brown and granulated sugars using an electric mixer until fluffy.
- Add the egg, egg yolk, and vanilla extract; mix until smooth.
- Gradually stir in the dry ingredients until just combined.
- Chill the dough in the refrigerator for at least one hour (up to 72 hours for enhanced flavor).
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Portion dough into balls and place them two inches apart on prepared sheets. Bake for 8 to 10 minutes until golden brown on edges.
- Let cookies rest briefly before transferring to a wire rack.
