Ingredients
- 2 1/2 ounces semi-sweet chocolate, chopped
- 3 tablespoons canola oil
- 6 tablespoons unbleached flour
- 1/2 teaspoon baking powder
- 1/4 cup sugar
- 1 large egg
- 1/4 + 1/8 teaspoon vanilla extract
- 5 tablespoons unsalted butter, softened
- 1/2 cup powdered sugar
- 12–15 clean blackberries
- 1 drop almond extract
- Zest of 1 lime
- Lime juice to taste
Instructions
- Preheat oven to 350°F (175°C) and line cupcake pan with paper liners.
- Melt chocolate and canola oil in the microwave; let cool slightly.
- Whisk in sugar and vanilla until combined; add egg and mix well.
- In a separate bowl, combine flour and baking powder; stir into chocolate mixture.
- Divide batter among liners and bake for 20–25 minutes until firm; cool completely.
- For frosting, beat together butter, almond extract, lime zest, and powdered sugar until creamy. Add mashed blackberries and adjust sweetness with lime juice.
- Frost cooled cupcakes with blackberry buttercream.
