  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee (or hot water)
  • 1 cup orange juice (freshly squeezed, strained)
  • 1 tbsp orange zest
  • ½ cup sugar
  • 2 tbsp cornstarch
  • 3 large egg yolks
  • 2 tbsp unsalted butter
  • 8 oz (225 g) dark chocolate, chopped
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • Fresh orange slices or candied orange peel

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt until well combined. Add eggs, milk, vegetable oil, and vanilla extract. Mix until smooth. Stir in hot coffee (the batter will be thin).
  3. Divide batter evenly among prepared pans. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Allow cakes to cool completely before assembling.
  4. In a saucepan, whisk together sugar, cornstarch, and egg yolks. Slowly whisk in orange juice. Cook over medium heat while stirring constantly until thickened. Remove from heat and stir in zest and butter; allow to cool completely.
  5. Heat heavy cream in a saucepan until steaming but not boiling. Pour over chopped dark chocolate in a heatproof bowl; let sit for 2 minutes. Stir until smooth; add butter for shine and let cool slightly before pouring.
  6. Place one layer on a serving plate and spread orange filling evenly on top. Repeat with the second layer; top with third layer without filling. Pour ganache over the top of the cake allowing it to drip down the sides.
  7. Garnish with fresh orange slices or candied orange peel before slicing and serving your delightful creation.
