Ingredients
- 1 cup quinoa
- ½ cup fresh cilantro
- 1 scallion
- 1–2 cloves garlic
- ¼ cup plant-based yogurt or olive oil
- Juice and zest of 2 limes
- 1 (15 oz) can white beans
- ⅓ cup red onion
- ½ cucumber
Instructions
- Rinse quinoa under cold water. Cook in a medium saucepan with 2 cups of water and a pinch of salt until fluffy (about 15 minutes).
- Blend cilantro, scallion, garlic, yogurt (or olive oil), lime juice and zest, coriander, vinegar, and maple syrup until smooth.
- In a large bowl, combine cooled quinoa with white beans, diced onion, and cucumber. Toss gently.
- Pour dressing over the salad mixture and mix well.
- Adjust seasoning to taste before serving or refrigerating.
