Ingredients
- 1 small head garlic
- 1 cup chopped fresh cilantro leaves
- 1 lime (juiced)
- 3 to 4 tablespoons extra virgin olive oil
- 1 1/2 pounds large shrimp (peeled and deveined)
- Kosher salt and black pepper
- Optional: harissa (or chili paste) for added spice
Instructions
- Preheat your oven to 400°F.
- Trim the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about 10 minutes.
- Once cooled, crush the roasted garlic and mix with cilantro, lime juice, olive oil, and harissa in a bowl.
- Season shrimp with salt and pepper; drizzle with olive oil.
- Heat a cast iron skillet or grill over high heat; cook shrimp for about 2 minutes on each side until pink.
- Toss cooked shrimp in the garlic sauce and serve immediately.
