  • 4 tablespoons melted vegan butter (for bread and swirl)
  • ¾ cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 ½ cups all-purpose flour (regular or gluten-free)
  • 1 cup old-fashioned rolled oats
  • ⅓ cup light brown sugar
  • 2 tablespoons cinnamon
  • ¾ cup powdered sugar (for frosting)
  • 2 oz softened vegan cream cheese (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract.
  3. In another bowl, combine baking powder, baking soda, cinnamon, salt, flour, and oats. Add to the wet mixture and stir until just combined.
  4. Pour half of the batter into the loaf pan. Mix melted vegan butter, brown sugar, and cinnamon for the swirl; spread half over the batter.
  5. Layer with remaining batter and top with the rest of the cinnamon swirl mixture.
  6. Bake for 50–60 minutes or until a toothpick inserted comes out clean. Cool before frosting with a mixture of powdered sugar, melted vegan butter, and softened vegan cream cheese.
