Ingredients
- 3 overripe bananas
- 4 tablespoons melted vegan butter (for bread and swirl)
- ¾ cup maple syrup
- 1 cup unsweetened almond or oat milk
- 1 ½ cups all-purpose flour (regular or gluten-free)
- 1 cup old-fashioned rolled oats
- ⅓ cup light brown sugar
- 2 tablespoons cinnamon
- ¾ cup powdered sugar (for frosting)
- 2 oz softened vegan cream cheese (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract.
- In another bowl, combine baking powder, baking soda, cinnamon, salt, flour, and oats. Add to the wet mixture and stir until just combined.
- Pour half of the batter into the loaf pan. Mix melted vegan butter, brown sugar, and cinnamon for the swirl; spread half over the batter.
- Layer with remaining batter and top with the rest of the cinnamon swirl mixture.
- Bake for 50–60 minutes or until a toothpick inserted comes out clean. Cool before frosting with a mixture of powdered sugar, melted vegan butter, and softened vegan cream cheese.
