  • 3/4 cup packed brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs, at room temperature
  • 1 cup plain Greek yogurt or sour cream
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon kosher salt
  • 1/2 cup brewed coffee
  • 1/2 cup packed brown sugar for streusel
  • 2 teaspoons cinnamon for streusel
  • 3/4 cup all-purpose flour for streusel
  • 6 tablespoons cold butter, grated for streusel
  • 6 ounces cream cheese, at room temperature
  • 1 1/4 cups powdered sugar
  • 23 tablespoons whole milk
  • 1/2 teaspoon vanilla extract for filling
  • 13 teaspoons instant coffee, to your taste for filling

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch bundt pan.
  2. In a large mixing bowl, beat softened butter and brown sugar until creamy. Mix in yogurt (or sour cream) and vanilla until smooth.
  3. Add eggs one at a time, mixing well after each addition. Gradually incorporate flour, baking powder, baking soda, spices, and salt until just combined. Stir in brewed coffee.
  4. Prepare the streusel by mixing brown sugar, cinnamon, flour, and grated butter until crumbly.
  5. Layer half of the batter in the bundt pan, sprinkle with streusel mixture, dollop cream cheese over it, then add remaining batter topped with more streusel.
  6. Bake for 50-55 minutes until a toothpick comes out clean. Let cool before serving.
