- 1 stick (8 tablespoons) salted butter, at room temperature
- 3/4 cup packed brown sugar
- 2 teaspoons vanilla extract
- 2 large eggs, at room temperature
- 1 cup plain Greek yogurt or sour cream
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 1/4 teaspoon kosher salt
- 1/2 cup brewed coffee
- 1/2 cup packed brown sugar for streusel
- 2 teaspoons cinnamon for streusel
- 3/4 cup all-purpose flour for streusel
- 6 tablespoons cold butter, grated for streusel
- 6 ounces cream cheese, at room temperature
- 1 1/4 cups powdered sugar
- 2–3 tablespoons whole milk
- 1/2 teaspoon vanilla extract for filling
- 1–3 teaspoons instant coffee, to your taste for filling
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch bundt pan.
- In a large mixing bowl, beat softened butter and brown sugar until creamy. Mix in yogurt (or sour cream) and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition. Gradually incorporate flour, baking powder, baking soda, spices, and salt until just combined. Stir in brewed coffee.
- Prepare the streusel by mixing brown sugar, cinnamon, flour, and grated butter until crumbly.
- Layer half of the batter in the bundt pan, sprinkle with streusel mixture, dollop cream cheese over it, then add remaining batter topped with more streusel.
- Bake for 50-55 minutes until a toothpick comes out clean. Let cool before serving.
