Instructions

- Add the diced potatoes to the pot along with enough vegetable broth to cover them completely. Bring to a boil, then reduce heat to simmer until tender (15-20 minutes).
- Stir in chopped kale or cabbage and cook for another 5-10 minutes until wilted.
- Blend the mixture until smooth using an immersion blender or regular blender (blend half for a chunkier texture if desired).
- Adjust seasoning with salt and pepper, serve hot garnished with chopped green onions.
