  • 2 celery stalks, sliced
  • 2 carrots, sliced
  • 2 garlic cloves, minced
  • 1/2 tsp dried thyme
  • 3 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 2 bay leaves
  • 1/2 cup wild rice (about 3.5 oz)
  • 3 medium potatoes, peeled and chunked
  • Salt, to taste
  • 1 1/2 cups light cream or half-and-half (12.5 fl oz)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausages and cook until browned, about 5 minutes; slice them into bite-sized pieces afterward.
  2. In the same pot, sauté onions, celery, carrots, and garlic until softened.
  3. Stir in thyme and flour; cook for about a minute to eliminate raw flour taste.
  4. Gradually add the broth while stirring to prevent lumps. Then add bay leaves, wild rice, potatoes, and sausages back into the pot; season with salt.
  5. Bring to a boil over high heat then reduce heat to low; cover and simmer for about 45 minutes until rice is tender.
  6. Remove bay leaves before serving; stir in cream just before serving.
