Ingredients
- 8 oz orecchiette pasta
- 1 cup cooked corn kernels
- 1 diced red bell pepper
- 4 slices cooked turkey bacon
- Fresh cilantro
- 1/3 cup basil pesto
- 3 tablespoons Greek yogurt
- 2 tablespoons mayonnaise
- 2 tablespoons lime juice
Instructions
- Cook the orecchiette pasta in boiling salted water until al dente. Drain and rinse under cold water.
- Chop the red bell pepper and cilantro while the pasta cooks. Slice the turkey bacon.
- In a mixing bowl, whisk together basil pesto, Greek yogurt, mayonnaise, and lime juice until smooth.
- Combine cooked pasta, corn, bell pepper, turkey bacon, and cilantro in a large bowl. Pour the dressing over and toss to coat evenly.
- Adjust seasoning as needed, garnish with parsley if desired, and chill before serving.
