- 4 large ears of fresh corn

- 1 cup diced English cucumber
- 1/3 cup diced red onion
- 2/3 cup crumbled feta cheese
- Olive oil
- Red apple vinegar
- Lemon juice
- Honey
- Minced garlic
- Fresh parsley
- Fresh basil
Instructions
- Whisk together dressing ingredients in a bowl; refrigerate.
- Boil water in a large pot; prepare an ice water bowl nearby.
- Cook shucked corn in boiling water for 2-3 minutes.
- Transfer corn to ice water to cool; drain well.
- Cut kernels from corn and combine with remaining salad ingredients in a mixing bowl.
- Pour chilled dressing over the salad; toss until evenly coated.
