  • 4 cups baby potatoes (diced)
  • 1 onion (diced)
  • 2 garlic cloves (minced)
  • 1 packet ranch seasoning mix
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • Salt and pepper to taste
  • 6 slices turkey bacon (chopped)
  • 1 cup chicken broth

Instructions

  1. In a skillet over medium heat, cook chopped turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, sauté diced onion until translucent; add minced garlic and cook until fragrant.
  3. Add diced potatoes to the skillet and cook for 5–7 minutes until they begin to brown.
  4. Stir in trimmed green beans, ranch seasoning mix, thyme, rosemary, and chicken broth. Mix well.
  5. Cover with a lid and simmer for 15–20 minutes or until vegetables are tender.
  6. Stir in crispy turkey bacon; season with salt and pepper before serving warm.
