  • 1 tablespoon vegetable oil
  • 1 small yellow onion, finely diced
  • 1 green bell pepper, finely diced
  • 1 teaspoon garlic, minced
  • 2 pounds ground beef
  • 2 large eggs, beaten
  • 1 cup canned pinto beans, drained and rinsed
  • ½ cup plain breadcrumbs
  • 1 cup BBQ sauce, divided
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons chili powder
  • 2 teaspoons kosher salt
  • ½ teaspoon cayenne
  • ½ teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded

Instructions

  1. Preheat your oven to 350°F and lightly spray a loaf pan.
  2. In a skillet, sauté diced onion and green bell pepper in vegetable oil until softened. Add minced garlic and cook for another minute.
  3. In a mixing bowl, combine the sautéed vegetables with ground beef, beaten eggs, pinto beans, breadcrumbs, half of the BBQ sauce, Worcestershire sauce, chili powder, salt, cayenne pepper, and black pepper. Mix gently until just combined.
  4. Shape half of the mixture in the loaf pan, create a trench down the center, fill it with shredded cheddar cheese, then top with the remaining meat mixture.
  5. Brush the top with BBQ sauce and bake for 40 minutes. Brush again with BBQ sauce and bake for an additional 25-30 minutes until cooked through.
