- 1 lb chicken or beef sausage (mild or spicy)

- 4 cups potatoes (peeled and diced)

- ½ tsp dried thyme

Instructions
- Finely chop the onion and garlic, then dice the potatoes into ½-inch chunks.
- In a skillet, heat olive oil over medium heat; sauté the onion until translucent (about 5 minutes), then add garlic.
- Transfer the sautéed mixture to a slow cooker along with diced potatoes and sliced sausage.
- Pour in chicken broth, season with salt, pepper, and thyme; stir well.
- Cook on low for 6 hours or high for 3 hours until potatoes are tender.
- Stir in heavy cream; mash some potatoes for a thicker texture if desired.
- Serve hot, garnished with cheese and fresh herbs.
