- 2 large ripe bananas, mashed
- ½ cup unsalted butter, melted
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- 8 oz cream cheese, softened
- ¼ cup granulated sugar (for filling)
- Extra cinnamon-sugar mixture for topping
Instructions
- Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- In a bowl, mash bananas and whisk in melted butter, brown sugar, eggs, and vanilla until combined.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to the banana mixture; stir until just combined.
- In a separate bowl, beat cream cheese with granulated sugar, egg, and vanilla until smooth.
- Pour half of the banana batter into the loaf pan; sprinkle half of the cinnamon-sugar mixture over it.
- Spread cream cheese filling on top and layer remaining banana batter over it.
- Finish by sprinkling the remaining cinnamon-sugar on top; swirl gently with a knife.
- Bake for 50–60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
