- 1 medium butternut squash (about 2 cups diced)
- 1 lb gnocchi
- 1 cup chicken or turkey sausage, crumbled
- 2 tsp fresh thyme, chopped
- 2 tsp fresh sage, chopped
- 1 cup vegetable broth
- 1 tsp agar-agar
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Peel and cube the butternut squash. Toss with olive oil, salt, and pepper, then roast for 25-30 minutes until tender.
- In a large pan over medium heat, add olive oil and sauté the crumbled sausage until browned.
- Stir in thyme and sage for about two minutes until fragrant.
- Blend roasted squash with vegetable broth and agar-agar until smooth.
- Combine the sauce with the sausage mixture in the pan over low heat.
- Cook gnocchi according to package instructions, drain, and toss into the sauce mixture.
