Ingredients
- 12–16 ounces short cut pasta
- 2 tablespoons olive oil
- 1 tablespoon cajun seasoning
- 12 oz smoked chicken sausage
- 1 medium yellow onion, diced
- 2 bell peppers, diced
- pinch red pepper flakes
- 2 cloves garlic, minced
- 1 1/4 cups chicken broth
- 1/2 cup heavy cream or full-fat coconut milk
- 2 tablespoons tomato paste
- 1/2 cup grated parmesan cheese
Instructions
- Cook the pasta in salted boiling water until al dente. Reserve 1 cup of pasta water, drain, and set aside.
- In a large skillet over medium-high heat, add olive oil and sliced smoked sausage with 2 teaspoons of Cajun seasoning. Cook until crisp for about 5 minutes, then transfer to a plate.
- In the same skillet, reduce heat to medium and sauté diced onion and bell peppers with the remaining Cajun seasoning and red pepper flakes until softened (about 3 minutes). Add minced garlic and cook for an additional minute.
- Whisk together chicken broth, heavy cream, and tomato paste in the skillet; bring to a gentle boil. Reduce heat and simmer for 5-7 minutes until thickened.
- Stir in grated parmesan cheese followed by cooked pasta and crispy sausage. Toss to coat and adjust sauce consistency using reserved pasta water if needed.
