- 14 ounces rigatoni
- 1 tbsp unsalted butter
- 11 ounces spicy chicken sausage
- 6 garlic cloves (minced)
- 4 tbsp tomato paste
- 1 tsp dried oregano
- ½ tsp salt
- ½ tsp black pepper
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- Optional: chopped parsley for garnish
Instructions
- Prepare your ingredients: mince garlic, grate Parmesan cheese, and slice the chicken sausages.
- Boil rigatoni in salted water until al dente; drain and reserve 1 cup of cooking water.
- In a large skillet, melt butter over medium heat, add chicken sausage pieces, and brown for about 5 minutes.
- Stir in minced garlic and sauté until fragrant.
- Add tomato paste and cook for about 3 minutes; then stir in oregano, salt, and pepper.
- Pour in heavy cream and bring to a boil before reducing heat to low; mix in grated Parmesan until melted.
- Toss cooked rigatoni with the sauce, adding reserved pasta water as needed to reach desired consistency.
- Adjust seasoning if necessary, garnish with parsley if preferred, and serve immediately!
