  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • Optional: chopped parsley for garnish

Instructions

  1. Prepare your ingredients: mince garlic, grate Parmesan cheese, and slice the chicken sausages.
  2. Boil rigatoni in salted water until al dente; drain and reserve 1 cup of cooking water.
  3. In a large skillet, melt butter over medium heat, add chicken sausage pieces, and brown for about 5 minutes.
  4. Stir in minced garlic and sauté until fragrant.
  5. Add tomato paste and cook for about 3 minutes; then stir in oregano, salt, and pepper.
  6. Pour in heavy cream and bring to a boil before reducing heat to low; mix in grated Parmesan until melted.
  7. Toss cooked rigatoni with the sauce, adding reserved pasta water as needed to reach desired consistency.
