  • 2 chicken breasts, cut into 1” pieces
  • 3 tbsp olive oil
  • 1 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • ½ medium onion, chopped
  • 3 cloves garlic, minced
  • ⅔ cup chicken broth
  • ½ cup full-fat sour cream
  • ½ tsp garlic powder
  • Salt & pepper, to taste
  • Flour, for dredging
  • 1 tbsp Dijon mustard, or more to taste

Instructions

  1. Season chicken with garlic powder, salt, pepper, and dredge lightly in flour.
  2. In a skillet over medium heat, add 2 tablespoons of olive oil and sear chicken until browned. Remove and set aside.
  3. In the same skillet, melt butter and sauté mushrooms and onions until golden brown.
  4. Add minced garlic, Dijon mustard, and Worcestershire sauce; cook for about a minute.
  5. Pour in chicken broth and mix well; return seared chicken to the skillet and let simmer for about 2 minutes.
  6. Stir in sour cream gently and adjust seasoning as necessary before serving.
