Ingredients
- 1 lb Ground Beef (or turkey)
- 1 large Onion
- 3 cloves Garlic
- 4 cups Beef Broth (or vegetable broth)
- 14.5 oz Diced Tomatoes
- 1 cup Corn
- 15 oz Black Beans
- 2 medium Potatoes
- 1 cup Heavy Cream (or coconut milk)
- 1 cup Shredded Cheddar Cheese
Instructions
- Sauté the chopped onion in a large pot over medium heat until translucent. Add minced garlic and cook for an additional minute.
- Add ground beef and brown it while breaking it apart with a spoon; drain excess fat if needed.
- Stir in diced tomatoes, broth, potatoes, corn, black beans, smoked paprika, chili powder, cumin, salt, and pepper. Bring to a boil.
- Reduce heat and let simmer uncovered for about 20 minutes until potatoes are tender.
- Stir in heavy cream (or coconut milk) and shredded cheddar cheese until melted and creamy.
- Serve hot and enjoy!
