  • 3 cloves Garlic
  • 4 cups Beef Broth (or vegetable broth)
  • 14.5 oz Diced Tomatoes
  • 1 cup Corn
  • 15 oz Black Beans
  • 2 medium Potatoes
  • 1 cup Heavy Cream (or coconut milk)
  • 1 cup Shredded Cheddar Cheese

Instructions

  1. Sauté the chopped onion in a large pot over medium heat until translucent. Add minced garlic and cook for an additional minute.
  2. Add ground beef and brown it while breaking it apart with a spoon; drain excess fat if needed.
  3. Stir in diced tomatoes, broth, potatoes, corn, black beans, smoked paprika, chili powder, cumin, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer uncovered for about 20 minutes until potatoes are tender.
