- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 16 oz fresh or frozen gnocchi
- 8 oz cream cheese
- 2 cups low-sodium chicken broth
- 1 cup shredded cheddar cheese
- 4 cups fresh spinach
- ½ cup crispy turkey bacon bits
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Chop the chicken into bite-sized pieces.
- In a large skillet over medium-high heat, cook the chicken until golden brown (about 5-7 minutes).
- Lower the heat and add cream cheese and chicken broth; stir until smooth.
- Add gnocchi and spinach; cover and simmer for about 5-7 minutes until the gnocchi is tender.
- Stir in shredded cheddar cheese and crispy turkey bacon until melted and combined.
- Serve hot in bowls.
