  • 16 oz potato gnocchi
  • 5 cups organic chicken stock

  • 2 cups organic kale (chopped)
  • 4 garlic cloves (minced)
  • 4 fresh thyme sprigs
  • 2 Tbsps extra virgin olive oil
  • Sea salt and black pepper (to taste)
  • 4 Tbsps organic all-purpose flour

Instructions

  1. Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper; sear for about 5 minutes per side until golden brown.
  2. Add minced garlic and thyme; sauté for another minute until fragrant.
  3. Sprinkle flour over the mixture; stir well. Gradually add chicken stock while stirring continuously to avoid lumps.
  4. Bring to a simmer, then add gnocchi according to package instructions (about 2–3 minutes). Stir in heavy cream and freshly-squeezed lemon juice and zest.
  5. Add chopped kale; cook for another 2–3 minutes until wilted. Serve warm.
