- 2 lbs organic chicken breasts
- 1 lemon (sliced and juiced)
- 16 oz potato gnocchi
- 5 cups organic chicken stock
- 1 ½ cups organic heavy cream
- 2 cups organic kale (chopped)
- 4 garlic cloves (minced)
- 4 fresh thyme sprigs
- 2 Tbsps extra virgin olive oil
- Sea salt and black pepper (to taste)
- 4 Tbsps organic all-purpose flour
Instructions
- Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper; sear for about 5 minutes per side until golden brown.
- Add minced garlic and thyme; sauté for another minute until fragrant.
- Sprinkle flour over the mixture; stir well. Gradually add chicken stock while stirring continuously to avoid lumps.
- Bring to a simmer, then add gnocchi according to package instructions (about 2–3 minutes). Stir in heavy cream and freshly-squeezed lemon juice and zest.
- Add chopped kale; cook for another 2–3 minutes until wilted. Serve warm.
