Ingredients
- 2 lbs Yukon Gold potatoes, thinly sliced
- 1/4 cup balsamic vinegar
- 3 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp fresh thyme, chopped
- Salt & black pepper
Instructions
- Preheat the oven to 375°F (190°C) and grease your baking dish.
- Thinly slice the Yukon Gold potatoes with uniform thickness for even cooking.
- In a mixing bowl, whisk together balsamic vinegar, olive oil, minced garlic, fresh thyme, salt, and black pepper.
- Layer the sliced potatoes in the greased baking dish, brushing each layer generously with the balsamic mixture.
- Cover with aluminum foil and bake for about 45 minutes to soften the potatoes.
- Remove the foil and bake an additional 15–20 minutes until golden brown and crispy.
- Allow resting for 5–10 minutes before slicing and serving.
