- 1 ½ cups Canned or Frozen Corn
- 1 cup Shredded Cheddar Cheese
- ½ cup Shredded Mozzarella Cheese
- ½ cup All-Purpose Flour
- 1 Large Egg
- ¼ cup Breadcrumbs
- 1 teaspoon Garlic Powder
- ½ teaspoon Onion Powder
- ½ teaspoon Paprika
- ¼ teaspoon Salt
- ⅛ teaspoon Black Pepper
- Vegetable Oil or Canola Oil
Instructions
- Prepare the corn by draining canned corn or thawing and patting dry frozen corn.
- In a mixing bowl, whisk the egg lightly.
- Add flour, cheddar cheese, mozzarella cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper to the bowl with the egg.
- Gently fold in the prepared corn until evenly mixed.
- Shape the mixture into small balls or discs.
- For frying: heat oil to 350–375°F (175–190°C) in a frying pan and cook bites until golden brown (about 2–3 minutes per side). For baking: preheat oven to 400°F (200°C) and bake for 15–20 minutes until golden brown.
