- 1 pound fresh skinless salmon fillets
- 1 cup panko breadcrumbs
- 2 large eggs
- 2 tablespoons olive oil
- Salt and pepper to taste
- 3 tablespoons low-sodium soy sauce
- 2 tablespoons honey or maple syrup
- 1 tablespoon fresh ginger, grated
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut salmon fillets into bite-sized pieces.
- In one bowl, beat the eggs until fluffy; in another, mix breadcrumbs with salt and pepper.
- Coat each salmon piece in egg, then roll in breadcrumbs, placing them on the baking sheet.
- Drizzle olive oil over the bites and bake for 12-15 minutes until golden brown.
- While baking, whisk together soy sauce, honey/maple syrup, and ginger in a small bowl.
- Serve warm with the sauce drizzled on top.
