Ingredients
- 1 lb ground beef or turkey
- 1 medium onion, diced
- 3 medium bell peppers, diced
- 28 oz can diced tomatoes
- 4 cups beef broth
- 1 cup uncooked rice or quinoa
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Prepare your ingredients by dicing the onion and bell peppers and measuring out the rice or quinoa.
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
- Transfer the browned meat to your slow cooker. Add the diced onions, bell peppers, diced tomatoes, broth, rice or quinoa, Italian seasoning, salt, and pepper. Mix well.
- Cover and cook on low for about 6 hours or until the rice is tender, stirring occasionally if possible.
- Serve hot in bowls topped with shredded cheese, sour cream, and fresh herbs as desired.
