- 2 cans fire roasted tomatoes and green chiles
- 2 cans cannellini beans
- 1/2 cup buffalo sauce
- 2 cups low sodium chicken broth
- 4 oz cream cheese
- 4 oz blended cottage cheese
Instructions
- Gather all ingredients.
- Add chicken, corn, tomatoes, beans, buffalo sauce, and broth to the slow cooker; stir well.
- Cook on low for 4-6 hours or high for 3-4 hours until chicken is cooked through.
- Shred the chicken using forks or a hand mixer.
- Stir in room temperature cream cheese until smooth; return shredded chicken to the pot.
- Cook on low for an additional 30 minutes.
- Incorporate blended cottage cheese before serving.
