- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups low-sodium beef broth
- 3 cups potatoes, diced
- 2 cups carrots, diced
- 2 cups celery, diced
- 1 can (14.5 oz) diced tomatoes
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions
- Brown the ground beef in a skillet over medium heat; drain excess grease and add to the slow cooker.
- Sauté onion and garlic until softened; transfer to the slow cooker.
- Add broth, potatoes, carrots, celery, tomatoes (with juices), Worcestershire sauce, basil, oregano, salt, and pepper; stir well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until veggies are tender.
- Stir in cheese and cream about 30 minutes before serving; continue cooking until melted and smooth.
- Taste and adjust seasoning before serving with desired toppings.
