  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 3 cups potatoes, diced
  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat; drain excess grease and add to the slow cooker.
  2. Sauté onion and garlic until softened; transfer to the slow cooker.
  3. Add broth, potatoes, carrots, celery, tomatoes (with juices), Worcestershire sauce, basil, oregano, salt, and pepper; stir well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until veggies are tender.
  5. Stir in cheese and cream about 30 minutes before serving; continue cooking until melted and smooth.
  6. Taste and adjust seasoning before serving with desired toppings.
