Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (28 oz) diced tomatoes with juice
- 2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Add diced onion and minced garlic; sauté until the onion is translucent.
- Transfer the beef mixture to a slow cooker and add kidney beans, black beans, corn, diced tomatoes (with juice), and beef broth.
- Stir in chili powder, cumin, smoked paprika, salt, and pepper.
- Cover and cook on low for about 6 hours or high for 3 hours.
- Before serving, stir well and adjust seasoning if necessary.
