Ingredients
- 1 lb. boneless, skinless chicken breasts/thighs
- 1 can (4 oz.) diced green chiles
- 1 can (15 oz.) cannellini beans (drained)
- 1 can (15 oz.) great northern beans (drained)
- 1 cup chopped onion
- 3 cloves minced garlic
- 8 oz. softened cream cheese
- 2 cups chicken broth
- 2 tbsp cilantro (fresh, chopped)
- 2 tbsp lime juice
- 1/2 tsp cumin
- 1/2 tsp oregano (dried)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp chili powder
Instructions
- Prepare your ingredients by chopping the onion and mincing the garlic.
- In a slow cooker, combine all ingredients except for the chicken and stir well.
- Place the chicken on top of the mixture, ensuring it’s well-covered.
- Cover and cook on low for 7 hours or high for 4 hours until the chicken is tender.
- Once cooked, shred the chicken using two forks and stir back into the chili before serving.
