- 16 ounces Italian sausage (or chicken/turkey sausage)
- 4 cups chicken broth
- 1 (28 ounce) can crushed tomatoes
- 2 (9 ounce) packages refrigerated cheese tortellini
- 2 cups fresh baby spinach
- 4 cloves garlic (minced)
- 1/2 medium onion (chopped)
- 2 medium carrots (sliced)
- 2 sticks celery (chopped)
Instructions
- In a skillet over medium heat, brown the sausage and onions for about 7-8 minutes until fully cooked.
- Stir in minced garlic for another 30 seconds before transferring the mixture to your Crockpot.
- Add carrots, celery, crushed tomatoes, and chicken broth to the Crockpot.
- Cook on low for 7-8 hours or high for 3-4 hours; add tortellini and spinach during the last 30 minutes.
- Season with salt and pepper to taste before serving.
