  • 1 ½ tbsp extra virgin olive oil
  • 1 ½ tbsp lemon juice
  • ¼ tsp grated garlic
  • ½ tsp fine salt
  • ⅕ tsp black pepper
  • 1 ½ lb cucumbers (sliced)
  • ½ red onion (finely sliced)
  • ¼ cup fresh dill (chopped)

Instructions

  2. Slice the red onion thinly and cut the cucumbers into approximately 3mm thick slices.
  3. In a large bowl, mix the sliced cucumbers and red onions. Pour the dressing over them and toss gently until coated.
