Ingredients
- ¾ cup Greek yogurt (or plain full-fat)
- 1 ½ tbsp extra virgin olive oil
- 1 ½ tbsp lemon juice
- ¼ tsp grated garlic
- ½ tsp fine salt
- ⅕ tsp black pepper
- 1 ½ lb cucumbers (sliced)
- ½ red onion (finely sliced)
- ¼ cup fresh dill (chopped)
Instructions
- In a small bowl, combine Greek yogurt, olive oil, lemon juice, garlic, salt, and black pepper to make the dressing.
- Slice the red onion thinly and cut the cucumbers into approximately 3mm thick slices.
- In a large bowl, mix the sliced cucumbers and red onions. Pour the dressing over them and toss gently until coated.
- Serve immediately or refrigerate for at least 30 minutes to enhance flavors before serving.
