Instructions
- In a medium bowl, combine the cooked chicken, diced apple, celery, scallions, sultana raisins, and yellow raisins.
- Sprinkle the mixture with curry powder.
- Add mayonnaise and chopped parsley; stir until well combined.
- Taste and adjust seasoning with salt, pepper, and more mayonnaise if desired.
