  • 1 ½ cups pitted dates, chopped
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 large orange
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup fresh orange juice
  • For the glaze: 1 cup powdered sugar, 2 tablespoons fresh orange juice, ½ teaspoon orange zest

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. Soak chopped dates in boiling water with baking soda for about 10 minutes until softened.
  3. In a bowl, cream softened butter and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition along with vanilla extract and orange zest.
  4. In another bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually combine dry ingredients with the wet mixture alternately adding fresh orange juice until just mixed.
  5. Gently fold in the soaked dates and any remaining liquid.
  6. Pour batter into the prepared loaf pan and bake for about 50-55 minutes or until a toothpick comes out clean.
  7. Allow to cool before glazing with a mixture of powdered sugar, fresh orange juice, and zest.
