- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp salt
- ½ cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 ½ cups shredded carrots
- 1 cup chopped walnuts or pecans (optional)
- 8 oz cream cheese, softened
- 2 cups powdered sugar, sifted
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, ginger, and salt.
- In another bowl, beat together the vegetable oil and eggs until fluffy. Gradually mix this into the dry ingredients until just combined.
- Gently fold in the shredded carrots and nuts if using.
- Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick comes out clean.
- While cooling, prepare the frosting by beating together softened cream cheese, powdered sugar, and vanilla extract until smooth. Frost the cooled bars before cutting.
