- 1 cup Shredded Coconut (toasted)
- 1 cup Fresh Fruity Additions (such as mango or pineapple)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a mixing bowl, whisk together sweet rice flour, sugar, baking powder, and salt.
- In another bowl, combine coconut milk, eggs, and vanilla extract until well blended.
- Gradually pour the wet mixture into the dry ingredients while stirring until smooth.
- Fold in shredded coconut and fruity additions gently.
- Pour the batter into the prepared pan and bake for approximately 35 minutes or until golden brown and a toothpick comes out clean.
- Allow cooling for about 10 minutes before transferring to a wire rack. Slice and serve.
