Ingredients
- ½ cup granulated sugar
- ¼ tsp salt
- Zest and juice of 4 large navel oranges
- 5 large egg yolks
- ¼ cup lemon juice
- 6 Tbsp unsalted butter
- 1 rosemary sprig (optional for flavor)
Instructions
- In a saucepan, combine sugar and salt with orange zest until it resembles wet sand.
- Add egg yolks and freshly squeezed orange and lemon juices; whisk until smooth.
- Heat over low-medium heat, stirring continuously until the mixture thickens (about 10-15 minutes).
- Stir in the rosemary sprig and continue cooking for another 5 minutes.
- Strain the mixture into a bowl with butter; whisk until the butter melts completely.
- Cover with cling wrap directly on the surface and refrigerate for at least an hour to set.
