- 1 lb beef sirloin, thinly sliced
- 1 cup bell peppers (mixed colors), chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups cooked rice (white or brown)
- 3 tbsp low-sodium soy sauce
- 1 tbsp fresh ginger, grated
- 1 tsp sesame oil
Instructions
- Slice the beef against the grain into thin strips. Chop bell peppers and onion; mince the garlic.
- Cook rice according to package instructions until fluffy.
- In a skillet, heat oil over medium-high heat. Sauté onions and bell peppers for five minutes. Add garlic and cook briefly.
- Push veggies aside; add beef to the skillet and sear for about three minutes until browned.
- Pour in soy sauce, ginger, and sesame oil; stir to combine and heat through for two more minutes.
- Serve over rice; garnish with sesame seeds or green onions if desired.
