- 2 pounds lean ground beef
- 2 large yellow onions, caramelized
- 1 cup breadcrumbs (plain or panko)
- 2 large eggs
- 1 cup shredded Swiss cheese
- Salt
- Pepper
- Garlic powder
- Onion powder
- Dried thyme
Instructions
- Caramelize the sliced onions in olive oil over medium heat for 20-30 minutes until golden brown. Set aside to cool.
- In a mixing bowl, combine ground beef, cooled caramelized onions, breadcrumbs, eggs, and seasonings.
- Shape the mixture into a loaf and place it in a greased crockpot.
- Cook on low for 6 hours or high for 3 hours.
- In the last 15 minutes of cooking, sprinkle shredded Swiss cheese on top and cover until melted.
