- 2 medium sweet potatoes
- 1/4 to 1/2 cup unsweetened vanilla almond milk
- 1 teaspoon vanilla essence
- 2 tablespoons almond butter
- 2 tablespoons pure maple syrup
- 1/2 teaspoon ground cinnamon
- 2 tablespoons flaxseed powder
Instructions
- Preheat your oven to 400°F (200°C). Wash and pierce the sweet potatoes multiple times with a fork, then place them on a baking sheet lined with parchment paper. Roast for about 45 minutes until tender.
- Once cooled, peel the sweet potatoes and place the flesh in a mixing bowl. Add almond milk, vanilla essence, almond butter, maple syrup, cinnamon, and flaxseed powder.
- Mash everything together until smooth.
- Spoon the mixture into bowls and drizzle with extra maple syrup or sprinkle with additional cinnamon if desired.
