  • 1/4 to 1/2 cup unsweetened vanilla almond milk
  • 1 teaspoon vanilla essence
  • 2 tablespoons almond butter
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons flaxseed powder

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and pierce the sweet potatoes multiple times with a fork, then place them on a baking sheet lined with parchment paper. Roast for about 45 minutes until tender.
  2. Once cooled, peel the sweet potatoes and place the flesh in a mixing bowl. Add almond milk, vanilla essence, almond butter, maple syrup, cinnamon, and flaxseed powder.
  3. Mash everything together until smooth.
  4. Spoon the mixture into bowls and drizzle with extra maple syrup or sprinkle with additional cinnamon if desired.
