Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz rotini or fusilli pasta
- 1 cup seedless grapes, halved
- 1 cup chopped celery
- 1/2 cup mayonnaise
- 2 tbsp poppy seeds
- 1 tbsp honey
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Season chicken breasts with salt and pepper, bake for 25-30 minutes until cooked through, then cool and dice.
- Cook pasta according to package instructions until al dente. Drain and rinse under cold water; set aside.
- Chop celery and halve grapes.
- In a bowl, whisk together mayonnaise, poppy seeds, honey, lemon juice, salt, and pepper until smooth.
- In a large bowl, combine pasta, chicken, celery, and grapes. Pour the dressing over and toss gently to coat.
- Chill in the refrigerator for at least one hour before serving.
