  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz rotini or fusilli pasta
  • 1 cup seedless grapes, halved
  • 1 cup chopped celery
  • 1/2 cup mayonnaise
  • 2 tbsp poppy seeds
  • 1 tbsp honey
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Season chicken breasts with salt and pepper, bake for 25-30 minutes until cooked through, then cool and dice.
  2. Cook pasta according to package instructions until al dente. Drain and rinse under cold water; set aside.
  3. Chop celery and halve grapes.
  4. In a bowl, whisk together mayonnaise, poppy seeds, honey, lemon juice, salt, and pepper until smooth.
  5. In a large bowl, combine pasta, chicken, celery, and grapes. Pour the dressing over and toss gently to coat.
  6. Chill in the refrigerator for at least one hour before serving.
