Ingredients
- 1 pound ditalini pasta
- 1 red or green bell pepper, diced
- 1/4 cup diced red onion
- 2 stalks celery, diced
- 1 cup English cucumber, diced
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon red apple vinegar
- 1 tablespoon sugar
- 1/2 tablespoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
Instructions
- Boil a large pot of water; add salt. Cook ditalini pasta according to package directions. Drain and cool under cold water.
- In a mixing bowl, whisk together mayonnaise, Dijon mustard, red apple vinegar, sugar, salt, black pepper, garlic powder, and paprika until smooth.
- In a large bowl, combine cooled pasta with diced bell pepper, red onion, celery, and cucumber.
- Pour the dressing over the pasta mixture and toss gently until well-coated.
- Cover and refrigerate for at least one hour before serving to allow flavors to meld.
