- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 cup chow mein noodles
- 1 1/2 cups milk chocolate chips
- 1 tbsp coconut oil or vegetable shortening (optional)
- 1/2 cup milk or dark chocolate chips
- 1 tsp coconut oil or butter (optional)
- Pastel candy eggs for decoration
- Optional: Colorful sprinkles or nonpareils
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cocoa powder, and salt. In another bowl, cream together softened butter and sugars until fluffy. Add vanilla and egg; mix well.
- Gradually combine dry ingredients into wet mixture until a soft dough forms. Scoop tablespoon-sized portions onto the baking sheet, flattening them slightly.
- Bake for 8–10 minutes until edges are set; let cool completely.
- For nests, melt chocolate chips in intervals until smooth. Toss chow mein noodles in melted chocolate until coated.
- Form nests on cooled cookies and fill with melted chocolate; allow to set before adding candy eggs.
