- 1 celery stalk (finely diced)
- 2½ cups broccoli (chopped into bite-sized pieces)
- 2 cups whole milk
- 2 cups shredded cheddar
- Salt and pepper to taste
- 1 cup shredded cheddar (for topping)
Instructions
- Melt unsalted butter in a large pot over medium heat. Add chopped onion and sauté until softened.
- Whisk in flour to create a roux, cooking for about 2 minutes.
- Gradually add chicken stock, seasoning with salt and pepper.
- Incorporate diced celery and chopped broccoli; simmer until tender (about 15 minutes).
- Stir in whole milk and cook until thickened (2-3 minutes).
- Remove from heat, slowly mix in shredded cheddar until melted.
- Adjust seasoning to taste before serving hot.
