  • 1 can Rotel tomatoes (10 oz, undrained)
  • 2 chicken breasts
  • 1 package ranch dressing mix

  • 1 tsp onion powder
  • 8 oz light cream cheese

Instructions

  1. Rinse black beans and place chicken breasts at the bottom of the crock pot.
  2. Pour in corn (with liquid) and add undrained Rotel tomatoes on top.
  3. Sprinkle rinsed black beans over the mixture.
  4. Add ranch dressing mix, cumin, chili powder, and onion powder; stir gently.
  5. Place cream cheese on top, cover, and cook on low for 6-8 hours.
  6. Once cooked, shred chicken with forks and return to the chili; stir well before serving.
