Ingredients
- 1 can black beans (15 oz)
- 1 can corn (15.25 oz, undrained)
- 1 can Rotel tomatoes (10 oz, undrained)
- 2 chicken breasts
- 1 package ranch dressing mix
- 1 tsp cumin
- 1 Tbsp chili powder
- 1 tsp onion powder
- 8 oz light cream cheese
Instructions
- Rinse black beans and place chicken breasts at the bottom of the crock pot.
- Pour in corn (with liquid) and add undrained Rotel tomatoes on top.
- Sprinkle rinsed black beans over the mixture.
- Add ranch dressing mix, cumin, chili powder, and onion powder; stir gently.
- Place cream cheese on top, cover, and cook on low for 6-8 hours.
- Once cooked, shred chicken with forks and return to the chili; stir well before serving.
