- 2 lbs boneless chicken thighs
- 4 cloves fresh garlic, minced
- 1 large onion, finely chopped
- 1 cup bell peppers, chopped (mixed colors)
- 1 cup chicken broth
- 2 tbsp taco seasoning
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Chop the onion and bell peppers; mince the garlic.
- In a bowl, coat the chicken thighs evenly with taco seasoning.
- Place the chopped veggies at the bottom of the crock pot. Layer the seasoned chicken on top and pour in the chicken broth.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken in the pot with two forks and stir to combine.
- Serve on warm tortillas topped with cilantro and a squeeze of lime.
